    Ice cream or Gelato makers shall integrate their theoretical knowledge and practical skill that make them as an Artisan Ice Cream/ Artisan Gelato, a sophisticated entrepreneur in ice cream business. It is our passion that is based on the concept of the all workshops proposed by i-Cream Solutions’ Training Classes. All training classes by i-Cream Solutions, not only just instruction of how to make a high quality Ice cream / Gelato, are pleasure to enhance the technical skill, new production technologies and updated information relating to ice cream business to all participants.

    Inside the all Training Classes by i-Cream Solutions are created to draw a real theoretical and practical training workshop where each participant can select the class best suited to their competencies and desirable needs. Each class is particularly composed in both parts of theoretical and practical sections. The theoretical section is involving the topics related to the subject of training class and also the relevant topics related to the ice cream business. The practical section is focused for experiencing the techniques of ice cream, gelato, and all relevant other frozen desserts, and operating with the necessary equipment to work as well. All training classes are instructed by the i-Cream Solutions team of “Masters of ice cream and gelato”, able to give all the answers related to the presentation of high quality ice cream.

Absolutely, the participants shall enjoy the making themselves hardpack style ice cream such as milk base ice cream, sherbet, sorbet and mores!
  • Basic Gelato Class Introduction to basic gelato class is instructed both of theoretical and real practical section. This class let the participants to well know the concept of making gelato, sourcing the ingredients, familiar with the equipments and also the historical of gelato in Italian culture. Eventually, the participants can enjoy the making themselves gelato and know “What is Artisan Gelato” !
  • This class is aimed for the real Artisan Ice cream/Gelato who would like to create the new innovative frozen desserts with their styles, passion and imagination. By this class the participants shall be instructed with the advanced techniques for applying the innovative products and well trained with relative advanced equipments. The participants would love Ice Cream Cake Class that challenge their abilities, skills and beyond imagination to complete the lovely unique ice cream cake in each style!
  • If the participants have joined the Ice cream cake class, they have to not miss out to join the Ice cream stick class as well, the class of learning the advanced techniques for applying the new other innovative products beside the ice cream cake. As well, the participants would love Ice Cream Stick Class that challenge their abilities, skills and beyond imagination to complete the cute unique ice cream stick in each style!
  • “What is Semifreddo”! it’s quite new for Thai. “Semifreddo” is a class of Italian semi-frozen desserts, typically such as ice cream cake, semi-frozen custards, certain fruit tarts, etc. It is usually produced by uniting two parts of ice cream/ gelato as a primary ingredient and whipped cream. This class, the participants shall be instructed the historical of semifreddo, ingredient combination, relevant necessary equipments, process and advanced techniques how to apply the innovative frozen desserts in many unique styles. If the participants would like to be a real Artisan frozen desserts, so DO NOT MISS OUT this semifreddo class!=

  • The main ingredients for making homemade ice cream or SME commercial ice cream,most of them are available in local suppliers, e.g. local bakery ingredient store, department store, etc. Major ingredients can be grouped in 2 groups that are first group of dried ingredients, e.g. whole milk powder, skim milk powder, sugar, s/e, etc., are classified as Single ingredients, and the other group of liquid ingredients, e.g. fresh milk, fresh cream, juice, etc. However, in modern ice cream business at the present day, many ice cream shops or gelato shops (gelateria) are using Ready mixed ingredients, which is becoming popularity, instead of Single ingredients, because of its comfortably using and making high quality premium ice cream with bulk volume.
  • In mainly part of dried ingredients such as whole milk powder, skim milk powder, various of sugar and stabilizer emulsifier (S/E) that are generally available in local bakery ingredient store. Particularly the one important ingredient for ice cream is Stabilizer and Emulsifier (S/E) that is various types for using which perform ice cream quality in term of texture, viscosity, smoothness, dissolution and structuring of ice cream. The basis S/E, is usually available in local shop, e.g. carboxymethyl cellulose (CMC), Locust bean gum (Carob bean gum), xanthan gum, guar gum,carragenan, etc.
